  1. Gather all ingredients. Cover a baking sheet with foil and spray lightly with cooking spray.
  2. Soak bread crumbs in milk (or beef broth) in a small bowl for 20 minutes.
  3. Heat olive oil in a skillet over medium heat. Add diced onion and cook, stirring, until softened and translucent, about 5 minutes. Reduce heat to low and continue cooking until very tender, about 15 minutes more.
  4. Gently combine ground beef and pork in a large bowl. Add the cooked onions, soaked bread crumbs, eggs, Parmesan, parsley, garlic, salt, pepper, Italian seasoning, and red pepper flakes. Mix with a rubber spatula until just combined. Cover and refrigerate for 1 hour.
  5. Preheat oven to 425°F (220°C).
  6. Roll mixture into balls about 1½ inches in diameter and arrange in a single layer on the prepared baking sheet.
  7. Bake until browned and cooked through, 15–20 minutes.
  8. Serve with your favorite tomato sauce.
