  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined — a few lumps are fine. Do not overmix.
  4. Heat a lightly buttered nonstick skillet or griddle over medium heat.
  5. Pour about ¼ cup of batter per pancake onto the griddle.
  6. Cook until bubbles form across the surface and the edges look set, about 2–3 minutes. Flip.
  7. Cook the second side until golden brown, about 1–2 more minutes.
  8. Serve warm with butter, maple syrup, or your favorite toppings.
