Ingredients
- 1 cup all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1 cup milk
- 1 large egg
- 2 tbsp melted butter (or oil)
- 1 tsp vanilla extract (optional)
Instructions
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined — a few lumps are fine. Do not overmix.
- Heat a lightly buttered nonstick skillet or griddle over medium heat.
- Pour about ¼ cup of batter per pancake onto the griddle.
- Cook until bubbles form across the surface and the edges look set, about 2–3 minutes. Flip.
- Cook the second side until golden brown, about 1–2 more minutes.
- Serve warm with butter, maple syrup, or your favorite toppings.
